Slightly fruity and sweet, lavender honey is characterized by its tangy character. Its flavor is long on the palate, with a calisson scent on the finish. Golden yellow in color when harvested, it will whiten during its crystallization, which is a natural phenomenon and which in no way affects the quality of the honey. If you prefer its initial texture (liquid), heat it in a water bath for 5 minutes at 40 degrees maximum so that it does not lose its virtues.
Tasting: As a sandwich, with a scoop of ice cream, on a dish, a fruit salad? Its use is varied according to the imagination! It is also the honey that is traditionally used in the composition of white and black nougat.
